Graeme Dunstan was originally from Fish Creek in Victoria, and joined Norwood from Collingwood for the 1975 season. He played 31 VFL games between 1972 and 1974 for Collingwood, the club his father Maurie had also represented from 1949 to 1954. Younger brother Ian played for Footscray and North Melbourne. 

Dunstan had made his VFL debut against St. Kilda in the 1972 finals series, and after playing 14 games in 1973, and 16 the following season, transferred to the Redlegs.

Initially earmarked as a full forward, he was named on a half forward flank in Norwood's 1975 Premiership winning line-up. An elbow injury had kept him on the sidelines for the first part of the season, and subsequently delayed his SANFL debut.

Eventually moved to the half-back line, "Mocha" as he was known, played State football against Western Australia in 1977 and was a member of Norwood's National Football League, Ardath Cup winning team in the same season. He played in the 1978 Reserves Premiership, and reached the milestone of 100 League games in 1980.

After retiring from playing in the SANFL, Dunstan was appointed playing coach of Athelstone in 1982, and later also coached Tea Tree Gully in the South Australian Football Association.

Back in the SANFL, Dunstan was Sturt Football Club's General Manager for seven years from 1998, and then the Adelaide Crows' Football Manager from 2005.

In 2014, he was appointed the Crows' State League Football Manager following the introduction of a Crows Reserves side to the SANFL competition.
